Our in-house chef Michael Santamaria has worked in restaurants in Hobart, Sydney and France, and he is as passionate about growing food as he is about cooking it. Working closely with our Horticulture Team he creates unique, delicious and healthy dishes using ingredients straight from our onsite organic gardens.
